Bear Naked: All Natural Granola, Oatmeal, Low Sugar Cereal and 100% Organic Hot Cereal
 
 
½ cup Bear Naked® Medley (dry) or
Bear Naked® Rolled Oats
1 ½ cups all-purpose flour
1 tbsp baking powder
1 tsp allspice
¼ tsp cinnamon
¼ tsp salt
2 tbsp flax meal
1 ¼ cups brown sugar
1 ¼ cups canned pumpkin
6 tbsp canola oil
4 egg whites
¼ cup walnuts
  1. Preheat oven to 350.
  2. Prepare a 12 cup muffin tray with muffin liners and lightly spray with nonfat cooking spray.
  3. In a large bowl, combine flour, baking powder, allspice, cinnamon, salt, flax meal, and Bear Naked® Rolled Oats or Bear Naked® Medley.
  4. Using a mixing bowl, mix brown sugar, pumpkin, canola oil, and egg whites.
  5. Stir in dry mixture.
  6. Fold in walnuts.
  7. Fill muffin cups ¾ full and bake for 18-22 minutes, until muffins are lightly brown.
  8. Place tray on cooling rack for 10 minutes before removing muffins from pan.

    Yield: 12 muffins
