Naked® Medley (dry) or
Bear Naked® Rolled
Oats
1 ½ cups all-purpose flour
1 tbsp baking powder
1 tsp allspice

2 tbsp flax meal
1 ¼ cups brown sugar
1 ¼ cups canned pumpkin
6 tbsp canola oil
4 egg whites

cup walnuts |

- Preheat oven to 350.
- Prepare a 12 cup muffin tray with
muffin liners and lightly spray with nonfat cooking spray.
- In a large bowl, combine flour, baking powder, allspice,
cinnamon, salt, flax meal, and Bear
Naked® Rolled Oats or Bear
Naked® Medley.
- Using a mixing bowl,
mix brown sugar, pumpkin, canola oil, and egg whites.
- Stir
in dry mixture.
- Fold in walnuts.
- Fill muffin cups ¾ full and bake for 18-22 minutes,
until muffins are lightly brown.
- Place
tray on cooling rack for 10 minutes before removing muffins
from pan.
Yield: 12 muffins
