cup whole wheat flour
½
cup all-purpose flour
2 tsp baking powder
½
tsp baking soda
1 tbsp flax meal

½ cup brown sugar
2 eggs
2 ripe bananas
¼ cup skim milk
1/3 cup canola oil
½ cup walnuts (optional) |

- Preheat oven to 350 degrees.
- Combine all the dry ingredients and mix well.
- In a small bowl, by hand, mash the bananas.
- In a separate mixing bowl, mix oil, milk, eggs.
- Add banana.
- Combine the dry ingredients and the wet ingredients.
- Pour batter into 8 inch loaf pan coated with nonfat cooking
spray.
- Bake at 350 degrees for 45-50 minutes.
- Store for
12 hours in foil before slicing.
