Bear Naked: All Natural Granola, Oatmeal, Low Sugar Cereal and 100% Organic Hot Cereal
 
 
1 cup oat bran
1 cup skim milk
½ cup chopped apples
½ cup chopped apricots
¼ cup chopped walnuts
½ cup brown sugar
2 tbsp honey
1 tbsp melted butter
1 egg
2 tbsp canola oil
1 ½ tsp cinnamon
¾ cup whole wheat flour
½ cup all-purpose flour
1 tbsp baking powder
¼ tsp salt
¾ cup Bear Naked® Rolled Oats
  1. Pre-heat oven to 400.
  2. Spray a 12 cup muffin tin with nonstick cooking spray.
  3. In a medium bowl, combine oat bran and milk. Let stand 10 minutes.
  4. In a large bowl, combine brown sugar, honey, butter, egg, canola oil, and cinnamon. Mix well.
  5. In a medium bowl, combine whole wheat flour, all-purpose flour, baking powder, salt, and Bear Naked® Rolled Oats.
  6. When ready, add oat bran and skim milk mixture to dry mix and stir.
  7. Transfer the above bowl to liquid ingredients and mix well.
  8. Fold in apples, apricots, and walnuts.
  9. Spoon batter into muffin tray and fill each cup 2/3 full.
  10. Bake for 16-20 minutes or until golden brown.

    Yield: 12 muffins
