1 tbsp melted butter

2 tbsp canola oil
1 ½ tsp cinnamon

cup whole wheat flour

cup all-purpose flour
1 tbsp baking powder

cup Bear Naked® Rolled Oats |

- Pre-heat oven to 400.
- Spray a 12 cup muffin tin with nonstick
cooking spray.
- In a medium bowl, combine oat bran and milk.
Let stand 10 minutes.
- In a large bowl, combine brown sugar,
honey, butter, egg, canola oil, and cinnamon. Mix well.
- In
a medium bowl, combine whole wheat flour, all-purpose flour,
baking powder, salt, and Bear Naked® Rolled Oats.
- When ready,
add oat bran and skim milk mixture to dry
mix and stir.
- Transfer the above bowl to liquid ingredients
and mix well.
- Fold in apples, apricots, and walnuts.
- Spoon batter into muffin tray
and fill each cup 2/3 full.
- Bake for 16-20 minutes or until
golden brown.
Yield: 12 muffins
